The story of Glacier 51 is extraordinary! Isolated deep in the sub-Antarctic, a staggering 4,109 km from mainland Australia lies one of the most inhospitable islands in the world – Heard Island. On the southern tip of this spectacular geographical feature, the breathtaking Glacier 51 pours into the surrounding treacherous icy waters. This is the ideal environment for the remarkable Toothfish, who patrols the underwater volcanic crevices, 2,000 metres below sea level.

On this very special occasion guests will not only savour the delicate characteristics of this fish, but will also be treated to a tale from the fisherman that dare to brave these conditions.

This exceptional degustation dinner will demonstrate culinary versatility very rare in fish fillets. The elegant balance of flavour and texture is second to none, and throughout the 5 courses you will discover why this prestigious fish is so vastly sought after and found on the menu at leading restaurants around the world.

Each perfectly prepared dish will be complemented by equally outstanding wine from the Qantas epiQure First and Business Class cellar to ensure a truly memorable evening.
